Corn Porn & My Love for All Things Corny

Do you like corn?
I love corn. I’m from Missouri, so I’ve always had a lust for corn. I like corn in my salads, on my pizza, tortillas, cornbread, corncake, popcorn, sweet corn, corn grits, and corn chex. Whether grilled, fried, creamed, blue, white, or yellow corn; I don’t discriminate. Dominicans are known for making particularly incredible Corn Pizza.


One of my favorite corn dishes is Elote. This is the Mexican street food version of “corn-on-the-cob.” Elote is typically served with condiments like cheese, lemon pepper seasoning, salt, cayenne, chili powder, butter, lemon juice, or lime juice, mayonnaise, and sour cream (or crema).

Another version of this dish is called Esquites. It’s a soupier version of Elote with grilled corn kernels, cotija cheese, lime mayo, & chilli to make one savory, sweet, and spicy combo.

In the US, corn has been traditionally served as a side dish at BBQs and family reunions. I’ve always said screw the meat, and headed straight for the corn. In modern food culture, corn can be found in cookie and pancake recipes. As more people switch to gluten-free diets, they’re using corn in place of traditional starches and grains. Momofuku Milkbar in NYC is known for their distinguished “Corn Cookies.”

I recently discovered Fried Corn-on-the-Cob. It’s like fried chicken breading on the outside, and sweet grilled corn on the inside – my new obsession! There’s something about corn that’s so nostalgic. Perhaps it’s the simplicity of it’s texture, my childhood memories or gorging on movie theater popcorn, or maybe because it reminds me of my humble midwestern beginnings. Either way, it was time I did a tribute to my favorite food. Here’s to CORN, and all it’s starchy, sweet, versatile beauty!




*** BONUS TIP: instead of having a taco bar at your next party, make a corn-on-the-cob bar. Grill the corn, and provide tons of different sauces, cheeses, and seasonings for your guests to go crazy!
