Recipe to make you fall in LOVE with carrots…

I AM NOT A CARROT PERSON. I never have been a fan of raw carrots, carrot fries, or even carrot cake. HOWEVER, I’ve always loved chocolate. Trust me when I say this, chocolate & carrots are a match made in heaven! These carrot & cacao truffles are everything! They’re a great energy booster & travel snack. Try not to eat too many!


INGREDIENTS

1 cup of almond flour
6 pitted prunes, chopped
1/2 cup of carrot, grated
2 Tablespoons of coconut flour
2 Tablespoons of raw peanut butter
1 Tablespoon of raw honey
1 Tablespoon of coconut oil
1 Tablespoon of flaxseeds
1 Tablespoon of hemp seeds
1 Tablespoon of pepitas
1 teaspoon of vanilla extract
2 Tablespoons of cacao powder
1 teaspoon of carob powder (optional)

DIRECTIONS

Use a cheese grater to grate carrot. Combine everything thoroughly (except the cacao & carob) in a mixing bowl. Roll the dough into 2 Tablespoon sized balls (should make 8-10). Refrigerate the dough balls for at least 30 minutes before rolling in cacao. Dust them with cacao to coat and store in the fridge for up to 7 days. This recipe makes 8 to 10.
