Recipe for a Fried Chicken Detox…

WARNING: This recipe is so good & good for you, it may cause you to poop your brains out! No seriously, prepare for a superior detox. I first made this recipe on my “cheat day” after I’d eaten A LOT of fried chicken, and it was absolutely delicious! It became a staple on our weekly menu, and my go-to meal after eating unhealthily. The flavors in this dish are on point, and it’s probably the healthiest, lightest teriyaki you’ll ever have. TRY THIS RECIPE, you’ll love it!


INGREDIENTS

2 cups of quinoa (or cauliflower rice)
1 lb of broccoli
1 yellow onion, sliced thin
2 large carrots, shredded
3 cloves of garlic, minced
avocado oil

TERIYAKI SAUCE
12 Tablespoons of coconut aminos
4 Tablespoons of pure maple syrup
2 Tablespoons of fresh lemon juice
2 teaspoons of fresh ginger, minced (keep skin)
1 large clove of garlic, minced
1/4 teaspoon of of red pepper flakes
1 teaspoon of tapioca starch/tapioca flour

DIRECTIONS

Bring 4 cups of water to a boil. Lower heat and add in 2 cups of quinoa; simmer covered for 15 minutes. While the quinoa is cooking, combine broccoli, carrots, onion, and garlic in a medium skillet. Drizzle avocado oil on the veggies and sauté over low heat until soft (approx. 15 minutes).

For the teriyaki sauce, combine ingredients and bring to a boil. Add in tapioca starch and lower heat, letting the sauce cool & thicken slightly. Serve the veggies over quinoa with a drizzle of teriyaki, and prepare for the detox of your life! This recipe serves 4.
