Recipe: Too many overripe bananas?

Traditional Southern Banana Pudding is quite possibly the most delicious dessert on the planet. However, between the sugar, butter, and chemical crackers (vanilla wafers) you’re asking for medical problems y eating this one. If you’re not into killing yourself slowly, you could always go for my favorite healthy breakfast/dessert, “banana nice cream.” You can find some “nice cream” recipes here. If you’ve had enough “nice cream,” and want something a little naughty that may put you to sleep, but won’t put you in a coma, I’ve got the perfect recipe for your overripe bananas!

overripe-bananaBanana Fritters are a popular dish all over the world. If you’ve ever been to a Brazilian Churrascaria, they typically have a wide variety of meat, a couple sides, and bananas fritas (fried bananas) for dessert. East African “zitumbuwa” combines overripe bananas with hot chili sauce, or a little diced onion to give it a savory kick. In Haiti, “beyens” are served with cinnamon and vanilla to compliment to already sweet, overripe bananas. Ingredients

Instructions
Prepping the Dough
  1. Dissolve the yeast in water.
  2. Heat oil in a pan on medium-high to 350 degrees F.
  3. Mash bananas into a paste, and add in coconut sugar.
  4. Add egg and salt into your banana paste.
  5. Slowly add in flour.
Frying the Fritters
  1. Use your fingers to form 3 Tablespoon dough balls and drop them one at a time into the hot oil.
  2. Deep fry each fritter for approx. 3 minutes.
  3. Remove fritters and dry on paper towels.
  4. Sprinkle with vegan powdered sugar or coconut sugar.
