You’ve never seen vegan like this before! I’ve replicated my mother-in-law’s famous chocolate chip cookie recipe with only gluten-free and vegan ingredients! They’re so addicting… you should really consider tripling, maybe even quadrupling the recipe!

Instructions
Dry Ingredients
  1. Preheat your oven to 350°
  2. Combine: almond meal, coconut flour, ground oats, baking soda, salt, and cinnamon in a blender. Blend into a fine dry powdered mixture. Set aside.
Wet Ingredients
  1. In a stand mixer, whisk together: coconut oil, applesauce, maple syrup, and vanilla.
  2. Slowly add dry ingredients into wet ingredients; blend thoroughly.
  3. Gently fold in chocolate chunks, grated chocolate, and nuts, mixing until just combined.
  4. Use a 3 Tablespoon cookie scoop to make 8 cookie dough balls.
  5. Place them on a sill pat or parchment paper, and bake the cookies for 10 minutes.
  6. Flatten the cookies with a spatula upon removing from oven, and transfer them to a wire cooling rack.
