Recipe: Candy Apple Banana Pancakes

There’s just something special about fall. We moved to LA over the summer, so leaves changing colors, caramel apples, pumpkin spice lattes, and apple pie give me these nostalgic, warm & fuzzy feelings…I woke up this morning murmuring about candy apples & my grandma’s pancakes lol.

However, I’ve been on a strict vegan diet lately so I’ve been missing out on all of the fall treats & our cabinet is pretty empty. I’m loving this vegan lifestyle & I wasn’t going to go buy ingredients to help me cheat on my diet, so it was time to improvise! This recipe turned out super freakin good! Here’s a healthier alternative to some of my fall favorites… CANDY APPLES & GRANNY CAKES!

  1. In one bowl, combine the first 6 ingredients (dry ingredients). Set aside. In a small saucepan, combine the next 5 ingredients (wet ingredients except for vinegar). Cover and once it begins to simmer, mash the bananas. Add in vinegar and let sit for 3 minutes. Slowly pour the wet ingredients into the dry ingredients, whisking the mixture until the consistency of regular batter. Heat a little coconut oil in a non-stick skillet until melted. Use 1/3 - 1/2 cup to scoop out batter. Cook the pancake on each side until bubbles begin to appear. Do your best to flip the pancakes by flicking your wrist, or use a spatula. This recipe yields 8 medium sized pancakes.
Candy Apple-less Syrup
  1. In the same saucepan you used to heat your dry ingredients, add syrup ingredients over high heat until bubbling. As soon as the mixture begins to darken (approx. 1 minute), remove from heat and swirl the mixture around the pan. This will help it to cool. The mixture will begin to harden (like candy apple coating), so pour it over your pancakes & serve promptly!
Recipe Notes

You can duplicate the syrup recipe depending on how much you prefer. A little goes a long way so I only use about 2 tsp for all 8 pancakes.

ALSO, if you want the pumpkin spice version, just add 1/2 cup mashed pumpkin, 1 pinch ground cloves, & 1 pinch allspice.
