Who doesn’t love chocolate chip cookies? There are SO many different chocolate chip cookies out there, it’s impossible to call mine the best. Don’t get me wrong, they’re pretty damn amazing, but as I always say, the world is better with options!

This recipe is for the imagination. If you want a basic, gooey chocolate chip cookie try these. If you want a crispy chocolate chip cookie, try these. These cookies are something I’ve always dreamt of creating. Like most of my fusion recipes, I wanted to make a cookie that reminded me of my granny’s spongecake. These defy what it means to be a chocolate chip cookie!

Instructions
  1. Preheat oven to 350 degrees F & line a baking tray with parchment paper (or use a sill pat).
  2. In a stand mixer, combine wet ingredients: almond butter, grated chocolate, coconut sugar, vanilla, honey, rum extract, & egg.
  3. In a separate bowl, thoroughly combine the dry ingredients: almond flour, coconut flour, baking soda, cinnamon, allspice, & salt.
  4. Slowly add the dry ingredients to the wet ingredients. Then add in the chocolate chips & nuts.
  5. Use a 3 - Tablespoon cookie scoop to form dough balls.
  6. Place the balls 3 inches apart on a baking tray & slightly flatten them. Bake the cookies for 11 - 15 minutes.
Recipe Notes

* This recipe should work with 3 1/2 cups of regular flour if you don't feel comfortable baking gluten-free!
