I hate my juice, but pulp muffins are incredibly flavorful and delicious! This is mandatory every time you juice from now on! The pulp is actually the healthiest part of a juice and turning it, as well as the seeds, into muffins is a dream come true! Pretty much any juice pulp will work, whether it's green juice, carrot juice, beet juice, or a fruity tropical juice. The toppings, however, should flow with the overall appeal of the juice. If you're having a dark leafy green juice, use blackberries & blueberries, or caramel & chocolate chips to add flavor. Below I'll teach you how to enhance a typical carrot-apple-ginger juice's pulp.

  1. 2 cups of juice pulp
  2. 1/2 cup of tapioca flour
  3. 1/2 cup of almond flour
  4. 1/2 cup of coconut flour
  5. 2 teaspoons of baking powder
  6. 1/2 teaspoon of cinnamon
  7. 1/2 of a banana
  8. 3T - 1/4 cup of honey
  9. 1/4 cup of oil (avocado/olive/grapeseed)
  10. 2 eggs
  11. 1/4 cup of pecans
  12. 1/2 cup of blueberries
  13. 1/4 cup of (currants/raisins/craisins)

  16. 1 Tablespoon of coconut oil
  17. 2 teaspoons of honey
  18. 1 Tablespoon of peanut butter
  19. 1 Tablespoon of orange juice
  20. 1 teaspoon of powdered sugar (optional)
  21. sprinkle of desiccated coconut
  1. Thoroughly combine dry ingredients, banana, honey, oil, and eggs in a blender.
  2. If the mixture is too thick, add a little nut milk.
  3. Fold in pecans, blueberries, and currants.
  4. Spoon mixture evenly into a greased muffin tin.
  5. Bake for 30 mins at 400.
  6. Check with a toothpick for consistency and leet cool out of the oven for 10 minutes before removing from muffin tin.
  7. Prepare peanut orange sauce while muffins cool.
  8. For the sauce, warm coconut oil, honey, and peanut butter over medium heat.
  9. Add in orange juice and optional powdered sugar.
  10. Serve over warm muffins with a sprinkle of desiccated coconut.
