Roasted Red Pepper Spinach Dip

This recipe combines Middle Eastern & Creole flavors. It’s great to take to your next event, and it’s healthy! The dip itself has a very peppery, savory flavor. I like to pair it with my paleo tortillas which serve as a gluten-free naan bread, & hummus. This recipe takes you on a trip around the world with influences from Greece, Morocco, Southeast Asia, and the deep south of the US.

Ingredients
  1. 1 Tablespoon of coconut oil
  2. 4 cloves of garlic, chopped
  3. 1/2 of a red onion, chopped
  4. 1 roasted red bell pepper (1/2 Cup), chopped
  5. 3 cups of spinach, fresh
  6. 7 oz coconut cream (half can)
  7. 1 teaspoon of turmeric
  8. 1 teaspoon of garlic powder
  9. 1 teaspoon of paprika
  10. 1 teaspoon of chili powder
  11. 1 teaspoon of Dijon mustard
  12. 1 Tablespoon of Tahini sauce
  13. 1/2 teaspoon of lime juice
  14. a couple shots of tabasco
  15. salt & pepper, to taste
Instructions
  1. Sauté onion & garlic in coconut oil for 10 minutes over medium-low heat.
  2. Add in spinach and roasted red pepper.
  3. Let cook for 3 minutes, then add in coconut cream.
  4. Add in seasonings, Dijon, Tahini, lime juice, and tabasco.
  5. Let ingredients fuse over medium heat for 10 more minutes.
  6. Serve warm.
